Mexican Lasagna - all about the options!

mandatory:
1 lb ground beef
1 jar salsa
1 jar salsa con queso
1 pack 10 in flour tortillas
1 bag shredded cheese
USE BRANDS YOU PREFER for custom spiciness.

optional:
sour cream
can of whole kernel corn
guacamole
refried beans
olives
olive oil
jalapenos
can of "salsa roja"
lettuce & diced tomatoes

in a large skillet over medium heat, brown ground beef. drain
add salsa and con queso. heat thoroughly.
in a baking dish (i use a round one...) layer beef mix, cheese, and tortillas. top with shredded cheese. bake @ 300 degrees till cheese is melted.

what i like to to in addition to the basic recipe:
lightly brown tortillas with olive oil in a skillet for a crisp texture.
mix corn in beef mixture.
layer guac & refried beans in addition to beef mix and cheese.
top with olives or peppers.
serve with sour cream & guacamole on lettuce & tomato side salad.
drizzle salsa roja over top & garnish plate.

the beef mix also makes a great dip for chips.

Fried Rice

1 package yellow rice mix
1/2 small onion (chopped)
1 small can peas/carrots (drained)
2 eggs
2 tbsp soy sauce

cook yellow rice per package directions.
in a large skillet on medium heat, add onion & peas/carrots.
add eggs. cook, stirring constantly, till eggs are "scrambled."
add soy sauce over top and serve.

Sesame Chicken

2 boneless, skinless chicken breast, cut in 1-2in. chunks.
some butter
soy sauce
brown sugar
sesame seeds

melt butter in a skillet on medium heat. place chicken in skillet. when chicken is about half done, sprinkle soy sauce over chicken (doesn't take very much). add brown sugar and sesame seeds when chicken is almost done. when sugar is melted and seeds are a little browned, the chicken will also be done. serve with fried rice.

My Mom's Potato Salad

4-5 good size potatoes
2 eggs
2 tbsp sweet pickle relish
Mayo to consistency
Apple Cider Vinegar, to taste
Salt and Pepper, to taste

Cube potatoes.
Boil potatoes and eggs until potatoes are soft.
Drain & cool.
Peel eggs & chop up.
Put potatoes & eggs into a large bowl.
Add pickle relish.
Add mayo until it is a good "potato salad" consistency.
Add vinegar, salt, and pepper to taste.

I prefer the salad served warm and fresh, but it is also VERY good chilled!

garnish (optional) a third boiled egg sliced like an orange (wedged from the top down) arranged like a daisy on top, lightly sprinkled with paprika.
