Pie Filling:
2 Egg Yolks (reserve whites for meringue)
1 regular can sweetened condensed milk
1 tsp grated lemon peel
1/2 cup lemon juice
Meringue:
2 Egg Whites
1/4 tsp Cream of Tartar
1/4 cup Sugar
1/4 tsp Lemon Flavoring
Graham Cracker Crust
Preheat oven to 325 degrees.
Separate eggs, reserving white for meringue. Put yolks in a bowl, beat well, add condensed milk, mixing well, then add the lemon zest and juice, pour into a graham cracker crust.
Whip egg whites. When they reach a soft peak, add sugar and cream of tartar and continue beating til standing peaks form. Add lemon flavoring, mix well, spread on top of pie.
Place into preheated oven for 15 minutes or until meringue is golden brown. Adjust timing for color, as all ovens vary.
